I love having a reason to bake.
Sure, I love to bake with random things around my house and see what creative recipes I can come up with, but it's more rewarding and exciting to bake for someone instead of just yourself.
That's one of the main reasons I prefer baking desserts over savory dishes. Because something sweet can always make someones day. Desserts are a staple at any holiday or birthday gathering. They are all about celebrating something joyful. Desserts and negativity just don't go together.
For Christmas, I gave a gift of any dessert "baked by Lauren" to my Aunt and Grandparents. It's a way to share my love of cooking with my family members. It also encourages me to go outside of my comfort zone and try a recipe that maybe I wouldn't necessarily have chosen.
My Aunt, step Uncle and Cousin all agreed on this recipe, a triple layered lemon bar, for me to make them. It has a shortbread crust, lemon cream cheese filling and is topped with a lemon curd.
I may have snuck a bite before I delivered it, and can say that they turned out absolutely delicious and even better than I expected! I had never attempted lemon curd before, because it kind of scared me. However, it came together perfectly on my first attempt.
I think giving this present was as exciting for me as it was for the recipients. I love to bake, and like I said earlier, I love having a reason to bake. I have a feeling a lot of friends and family will be getting an abundant amount of desserts this year :)
The recipe was from my Aunt's cookbook, but I found the same recipe online:

I am the Aunt who was lucky enough to receive this amazing dessert. We devored them all in 24 hours. The three layers were all delicious and obviously Lauren has a lot of talent:)
You have a nice blog here. Thanks for sharing! I'll be back.
Hi, Lauren! It's nice to find your blog, and another teen who loves to bake as much as I do! I can't remember the last time I tried lemon bars - but I do remember liking them very, VERY much. Yours look delicious!
Hey! I'm 16, and I love baking too! AND these look delicious. I love lemon bars, but my mom never makes them - and never has the stuff to make them - because she doesn't like them. Maybe I can make them sneaky-like sometime when she's not around...(;
